Carl’s Spanish chicken
This is the perfect meal for entertaining, plus you can drop in a casual mention that you got the recipe from Carl!
We notice Carl is quite ‘freestyle’ with the amount of ingredients he uses. Frankly we’d expect nothing less from the dressage legend!
Ingredients
Red, green and yellow peppers
Red and white onions
Cloves of garlic
2 chicken thighs per person
Jersey Royal new potatoes
Cherry tomatoes
Chorizo
Olive oil
Salt and pepper
Balsamic vinegar
Method
- Season chicken thighs with salt and pepper
- Chop up all of your veg and chorizo and pop it in a roasting tin
- Place chicken thighs on top of the veg
- Chuck in some Jersey Royals
- Drizzle with olive oil and balsamic vinegar
- Pop into the oven for 20 minutes (mind the dogs!)
- Have some wine and a chat with your guests
- After 20 minutes take out and turn your chicken thighs
- Pop in the cherry tomatoes for the last 20 minutes
- Make sure you have a nice crispy skin on your thighs
